There is no reason, based on the current evidence, to treat any of these as off-limits.
Butter, coconut oil, beef tallow, and ghee are all high in saturated fat, which is the fat type most consistently associated with raising LDL cholesterol. That does not make them dangerous in moderate amounts, and they can absolutely fit into a varied diet. It does mean that swapping all of your seed oil for tallow or butter is a meaningful increase in saturated fat intake, and the Dietary Guidelines for Americans suggest that for most adults, moving in the other direction tends to be the heart-healthier shift.
Where The Bigger Wins Tend To Show Up
If you zoom out from the question of which oil is in the pan, the changes that the evidence supports most strongly are usually about the rest of the diet. Eating more whole and minimally processed foods. Building meals around vegetables, fruit, legumes, whole grains, nuts, and lean protein. Bringing in omega-3 sources regularly, whether that is fish, plant sources, or a supplement. Easing up on ultra-processed foods, sugary drinks, and packaged snacks. Watching saturated fat overall, not as a panic point but as part of the larger pattern.
Those are the moves with the strongest backing across decades of research. They are also the moves that tend to feel sustainable, because they involve adding good things rather than fearing single ingredients.
If you have already cut seed oils, feel good about your cooking, and your overall diet is in a good place, there is no urgency to add them back in. If you have not cut them and never planned to, the current evidence does not give you a strong reason to start worrying. Either way, the bigger wins are usually somewhere else on the plate.
