Citrulline and the Nitric Oxide Connection
Watermelon's most interesting feature is one you can't taste. It is the highest known dietary source of L-citrulline, an amino acid your body converts into L-arginine and then into nitric oxide, as the Cleveland Clinic explains. That last molecule is the one that matters most for your heart.
Think of nitric oxide as a gentle signal that tells the smooth muscle lining your blood vessels to loosen and widen. When vessels relax, blood flows more easily and the pressure against their walls eases a little. It is the same biological pathway that a lot of cardiovascular research focuses on, which is why a fruit rich in the raw material for it keeps catching scientists' attention.
Lycopene, Potassium, Water, and Very Few Calories
The rest of watermelon's résumé is easier to picture. A single cup is about 92 percent water and right around 46 calories, with no fat or cholesterol, roughly 170 milligrams of potassium, and a helping of vitamins C and A — and the fruit even carries the American Heart Association's Heart-Check certification. That combination is why it slips so easily into a weight- and blood-pressure-aware way of eating.
Potassium is quietly doing useful work here. The American Heart Association explains that the mineral helps counter the effects of sodium and eases tension in blood vessel walls, which supports healthier blood pressure. One cup of watermelon won't get you to a full day's target on its own, but it is a tasty contribution to a potassium-rich plate.
Then there is the color. That deep red flesh is loaded with lycopene, an antioxidant carotenoid — and research from the USDA Agricultural Research Service found that watermelon actually carries more of it than a raw tomato, averaging roughly 40 percent more, with about 9 to 13 milligrams in a one-and-a-half-cup serving. The riper and redder the slice, the more lycopene it tends to hold.
