Most of us have a one-recipe relationship with mango. It goes in the smoothie. We blend it with banana and a splash of milk, drink it on the way to work, and that is the end of the conversation. Which is a little unfair to the fruit — and to your week. Of all the things in the produce aisle, mango is one of the more interesting ones, and it has somewhere between four and twelve more places to be.
Two things make this easier than it used to be. The first is that mango is no longer a tropical-vacation fruit in the United States. Walk into almost any grocery store, in almost any season, and you will find at least one variety — usually the round, red-and-green Tommy Atkins, sometimes the smaller, sunshine-yellow Ataulfo (also sold as Honey or Champagne). The second is that the fruit is, frankly, forgiving. Sweet enough to feel like dessert, soft enough to skip serious knife skills, friendly to almost every flavor it meets — chili, lime, mint, basil, ginger, coconut, cumin, fish sauce, soy. You don't have to learn anything new. You just have to point it at a different meal.

Mango brings fiber, vitamin C, and polyphenols to a plate, and a small but growing body of research has been looking at what daily mango actually does inside us. None of these recipes will fix anything on their own. They are simply more places for a useful fruit to land.
